The Chaseholm Nimbus is a triple cream, soft-ripened cow’s milk cheese made from the rich whole milk of their grass-fed herd from a creamery that makes small batches of artisanal cheese located in Pine Plains, NY. It has a bloomy rind, out of the French tradition, and is cave-aged for 6 to 8 weeks for a soft, rich pâté through the center. The triple cream pairs three parts of butterfat for every one-part protein. The Chaseholm Nimbus is decadent, creamy, and delicious.
